We rub the whole baby pig inside and outside with salt, pepper and aromatics. Then we perfectly slow roast it in the oven until the pig is cooked and broil for the last 20 minutes for that extra crisp finish. Finally we let it rest tented in foil for at least 30 minutes before cutting and vacuum-sealing.
How to heat:
Defrost for 6 hours or overnight. Place the pieces of meat on the oven tray (wrapped with aluminum foil) and reheat them at 180C for 40 minutes. Serve with our corn tortillas, our handmade sauces and your favorite sides.
