Oaxaca cheese is named after the place of its birth, Oaxaca in Mexico. It’s a beautiful, stretched curd cheese commonly known as Quesillo and it is by far the MOST POPULAR cheese in Mexico for making Quesadillas. The cheese is heated, stretched and wound into a ball.
Our Oaxaca cheese is made with full cream milk from the cows on our dairy farm in Nanjo, Okinawa. Delicious by itself, in a salad, on a pizza or make your own Quesadillas adding White Corn Tortillas, Blue Corn Tortillas and your choice of any of our handmade sauces.
How to defrost
Defrost the cheese in the fridge for 6 hours or overnight.
How to make Quesadillas
Defrost the corn tortillas and the oaxaca cheese in the fridge for 6 hours or overnight.
Heat a frypan on medium low heat, place the tortilla and let it warm a bit, then add 20-30g of Queso Oaxaca, then fold the tortilla in half until it gets crispy in both sides. The cheese will beautifully melt (keep an eye to avoid burn it)
Note: You can add any choice of toppings such as meat, veggies, chilies, etc. Serve the Quesadillas with any of our Handmade Sauces

I’ve never been able to find Oaxaca cheese in Japan. It’s something that I eat every time I’m back in the US. I made quesadillas with my new Queso (and tortillas!) from Meat Express and they were delicious!!
