Pork Spare Ribs

Spare ribs (also side ribs or spareribs) are a variety of pork ribs cooked and eaten in various cuisines around the world. They are cut from the lower portion of the pig specifically the belly and breastbone, behind the shoulder, and include 11 to 13 long bones. There is a covering of meat on top of the bones and also between them. Spare ribs (pork) are distinguished from short ribs, which are beef. Spare ribs are cut from the ends of baby back ribs and run along to the pig’s breast bone. One side has exposed bone — that’s where they meet the baby backs — and the other side, the side near the breast bone, is where the rib tips are, a flap of meat that has some small bones and cartilage in it.

How do you tenderize pork ribs?

Marinades: These are also recommended to add flavor and tenderize ribs. Steaming: If you have a large enough steamer or can improvise one, steam the ribs over water or apple juice for an hour. Slow oven baking: This is a braising method. Prepare a pan of water or apple juice and place the ribs on a rack above them.

Do ribs get more tender the longer they cook?

When you grill ribs, they won’t fall off the bone. They will, however, come off the bone cleanly when you eat them. The longer you cook them, the more tender they will be.

At what temperature do ribs fall off the bone?

According to USDA, ribs are “done” when they are 145°F internal temp, but they may still be tough. If you take them up to 190 to 203°F, the collagens and fats melt at this temp and make the meat more tender and juicy. Then they’re ready!
