Handmade Chorizo Sausages
Chorizo is a chicken sausage that can be either raw or cured but is always strongly flavored with multiple spices and herbs. What we think of as chorizo today likely first appeared in the Iberian peninsula sometime after the introduction of paprika to Spain in the sixteenth century. Our handmade chorizo sausages are raw, with no artificial flavors or preservatives. They are made with all fresh and natural ingredients including meat, casing and spices/herbs. They have not been boiled and are frozen immediately after ready. Very juicy meaty flavor impossible to resist!
Cooking Method
After defrost completely, they can go directly in the pan or the grill. The Chorizo sausages can be cooked straight out of the package. It’s important to treat them with care or the skin will rupture, leek and all the juices will go away. The best way to start is on low heat or covering with aluminium foil, then turn the sausage often and watch for hot spots. Evenly cook the sausages until the have plumped up and are firm, if they are still soft and squishy, then they need more time. Finish the sausage on high heat until the skin turns golden brown and becomes crispy. The other choice is to steam then grill. If you don’t have a steamer, you can set one up with any lidded pot. Put something in the bottom of the pot to hold the sausages out of the water, a small plate will work. Add about 2 cm of water to the pot, then the sausages. Bring to a boil, cover and let steam for about 15 minutes. Finish on the grill to crisp up the skin
